Ingredients:
- 4 Sawyer Creek Onion & Garlic Bratwursts, cut into 1-inch pieces
- 2 medium red potatoes, diced
- 2 carrots, sliced
- 1 zucchini, halved and sliced
- 1 red bell pepper, chopped
- 1 yellow onion, sliced
- 2 tbsp olive oil or melted pork lard
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 1⁄2 tsp sea salt (or to taste)
- 1⁄4 tsp black pepper
- Optional: chopped fresh parsley or shredded cheese for topping
Directions:
- Preheat your grill to medium-high or prep a campfire with hot coals.
(Oven method: Preheat to 400°F.) - Toss the veggies (potatoes, carrots, zucchini, bell pepper, and onion) in a large bowl with olive oil or lard, paprika, Italian seasoning, salt, and pepper.
- Divide the bratwurst pieces and seasoned veggies evenly into 4 foil packets (use heavy-duty aluminum foil, about 12”x12” squares). Seal tightly, folding the edges together to make a pouch.
- Grill or cook over the fire for 25–30 minutes, flipping once halfway through. (If baking in the oven, place foil packs on a baking sheet and bake for 30–35 minutes.)
- Carefully open foil packs (watch for steam!) and garnish with parsley or a sprinkle of cheese, if desired.
