Sawyer Creek Sweet Potato & Pork Breakfast Skillet 

Ingredients:

  • 1 lb. Sawyer Creek pastured pork breakfast sausage
  • 1 tbsp coconut oil or grass-fed butter
  • 1 medium sweet potato, diced
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 1 cup baby spinach or kale, chopped
  • 4 eggs
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ¼ tsp sea salt (adjust to taste)
  • ¼ tsp black pepper
  • Optional: Red pepper flakes for heat
  • Optional: Shredded cheese for topping

Directions:

1.    Cook the sausage – In a large cast-iron skillet, heat coconut oil or grass-fed butter over medium heat. Add the pastured pork breakfast sausage and cook until browned, breaking it up as it cooks. Remove from the skillet and set aside.

2.    Sauté the veggies – In the same skillet, add the diced sweet potatoes and cook for about 5-7 minutes, stirring occasionally. Add the onion and bell pepper, and continue to sauté until everything is softened.

3.    Add the greens – Stir in the baby spinach or kale and let it wilt for about a minute. Return the cooked sausage to the skillet and mix everything together.

4.    Cook the eggs – Make four small wells in the mixture and crack an egg into each. Cover the skillet with a lid and cook until the egg whites are set but the yolks are still runny, about 3-5 minutes. If you prefer firmer yolks, cook a little longer.

5.    Season & serve – Sprinkle with garlic powder, Italian seasoning, sea salt, and black pepper. Add red pepper flakes for heat or shredded cheese for extra flavor. Serve hot!
