Ingredients:
- 1 lb. Sawyer Creek grass-fed ground beef
- 1 tbsp coconut oil or avocado oil
- ½ medium red onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded carrots
- ½ red bell pepper, finely diced
- 2 tbsp coconut aminos (or low-sodium tamari)
- 1 tbsp raw honey
- ½ tsp ground ginger
- ¼ tsp sea salt
- ¼ tsp black pepper
- 1 small head butter lettuce or romaine (for wraps)

Optional toppings: chopped green onions, sesame seeds, or a squeeze of lime
Directions:
- Heat the oil in a skillet over medium heat. Add the chopped onion and garlic. Sauté until softened (about 2–3 minutes).
- Add the ground beef to the skillet. Cook until browned, breaking it up with a wooden spoon, about 6–8 minutes
- Stir in the carrots, red pepper, coconut aminos, honey, ginger, salt, and pepper. Cook for another 4–5 minutes until veggies are tender and flavors are combined
- Wash and separate the lettuce leaves. Pat them dry with a paper towel.
- Spoon the beef mixture into the center of each lettuce leaf like a taco.
- Top with optional garnishes like green onions or sesame seeds and serve immediately.
